Use the Ubuntu LTS (long term support) versioning it is supported for 3 years.

I have one box that updates often to the latest production release -- just so I can see the changes before I would change my LTS workstations.

Servers should always the LTS if Ubuntu -- upgrading can be messy on servers. Better to just make a new server, move the files and test it prior to production -- then close the old server.
