With the adrenaline of the attacker pumping - I don't think there is an "easy" way to do anything.

When you move, the attacker reacts. How? Well, that's the first big problem you'll face when you make a move. He's not going to stand there unless he's drunk. Most likely he'll react instantly by thrusting the knife forward at you or by pulling it back and then attacking you with it.

The best way to defend against a knife attack is with a gun... the second best way is by not being in a place to be attacked by a knife.
