Peaches, SpamArrest doesn't delete anything for you unless you tell it to. If it finds an email from an address it hasn't encountered before, it will hold onto it until you tell it to block that address or let it through.
So you've always got full control.
Once you've set someone to be blocked though, it will block all emails from that person - but you can always go back in to the interface and un-block them if you want/need to.
I just wish they'd let you put more than one address (ie multiple aliases) on an account.
