It's simple. The art performed by actors and singers make us happy, or sad, and move us in all kinds of ways. We fall in love with the characters they portray or the music they create. When they die, some people feel that loss as if it was a loss from their own family.
This feeling is made worse when the loss was especially tragic (too young, accidental, etc), or when its really really fucked up such as the death of Debbie Renynolds death right after her own daughter's death.
People cry over the death of a character in a movie or TV show, so why not the actor too?
It's an interesting phenomena that I'll never understand.
