Physics.
Full sized headphones have better dynamic range because of the isolation of the drivers from anything else around them. Bass sounds better because of the space around the drivers just like a large set of speakers is able to resonate well at lower frequencies.
High quality headphones, like my Beyer Dynamics, are large but so comfortable you hardly notice them. They are far more comfortable than ear buds.
In top end headphones you can have closed or open designs. Closed designs are better at excluding outside noise, very good for in studio use. Open designs give a little edge on clarity, however outside noise will pollute the sound.
