All u have to do is find out what she's interested in -- then recommend some kind of event that relates to both of your interests... Then just say "hey i heard about this event blah blah at such a time and place" -- if she shows up then ur lucky, if not -- forget about her...
Just forget about talking to her at work -- girls are amazing liars and it's their job to be as convincing and as real as possible... also think about this dude -- your uncle is a "celebrity" at this place and probably spends a lot of money there -- so OF COURSE she is going to be EXTRA nice to you... shit so just fucking clear it out of your head any signals that she is giving u -- that's her fucking job -- it's all in your head until you meet her outside of work...
