I don't think it has anything to do with "moderates" (which would be a person with no real backbone or passion for anything). I don't think you are really a "moderate". I'll bet you dollars to donuts that you feel VERY strongly about several issues.
And since those are your beliefs (whatever they may be)...those are the ones that seem reasonable to YOU. And anyone outside of what seems reasonable to you is "extreme"

We all are.

And then politicians come along in the general election and smile and nod and lie like hell trying to somehow get the maximum number of people conned into voting for them.

And then when the smoke clears...they "Obama" you and do the exact opposite of what they promised.
