 I thought about doing the culling myself.  But I'd want to build/buy a plucker to do it.   There's a place nearby that does it for $3 a bird, which I think is more than fair.   I pick them up loose in bags of 3 and then do the rest of the butchering myself before vacuum sealing them.  
 I keep a few whole (minus the wings since I take them off all of the birds), the rest, I remove necks and backbones for stock and either keep them halved or quartered.   They are big, so half usually does dinner for 3 and lunch the next day with some left over.   I think I calculated the total cost per bird at around $13-15 (day old chicks/feed/Processing)
