Only reason I'm going with them, if possible. Is that I have a hard time forgiving when it comes to certain things. And if I join some unknown biller, and they take my money. I know for sure, I will be bitter about it for the rest of my life.

From what i see you have 3 concerns:

1. To be able to do exactly what you want in regards to pricing and transaction amount - lets call it simply Flexibility
2. Double digit fees for the processing service (15%)
3. To be sure you are always get paid and your money will not be "taken" by a processor.

What you need to fix all the 3 things at once is your own merchant account with a proper gateway. You do whatever you want and how you want it in regards to the set up, you pay around 5% or less and you get paid directly by the acquiring bank to your account without any middle man. The payouts comes weekly with just one week delay, so your cash flow looks better.
