I lived in South Florida for 20 years, I even helped some friend(s) run a Cuban cafeteria in North Miami for a couple of years.
Cuban food was a staple at least a couple times a week for many, many years, I miss it a lot.

Or even just a Cuban Sandwich with some papa fritas, it's all good.
Here's my advice:
If they say they have Rabo, eat it.
Don't ask what it is... just eat it, you can thank me later
