Or, delete error_log and restart apache and you will get an error log that is fresh

rm -Rf /etc/httpd/logs/error_log

then

apachectl graceful

Your error_log should be cleared, and apache restarted gracefully

Just did it on one of my servers and it worked fine.

Then pico /etc/httpd/logs/error_log

Nice clear log!
