You have never worked in restaurants where cross contamination is a reality.
I have kosher friends with 2 dishwashers. they would never eat in a non kosher place let alone one with pork.
Trust me, they are doing it for the economics. If they were losing more money by dropping bacon than they could gain, they wouldn't be making this move.
