That has little to do with it sharks have a very high ammonia content that is excreted through urea over their gills, when they die the ammonia builds up very quickly making the meat really not very good for consumption, very small sharks tend to be a little tastier but still as a fish they are at best a two on a 1 to ten scale of the quality of the meat, they barely outrank carp
My general rule with fish is that if I wont eat it raw I wont eat it cooked....that includes king mackeral, shark, catfish and other scavengers and pelagics
