Kosher and halal slaughters are the same except that for halal they thank god before killing the animal.
I'm not too familiar with the specifics of this, but I read once that jews believe it is the most humane method of killing the animal. I think at the regular processing plants they stun the animal, hang it from the ceiling by its hind legs and then slit the throat while it's still alive so that the heart pumps the blood out. I don't think Kosher and halal hang the animal up, but it's obviously feeling getting its throat slashed. I guess it comes down to just how stunned those animals are in the regular process if we want to determine which one is more humane.
