I can think of two reasons why your real details may show up...
1) At some point you did not have domain privacy, so your real details were archived by a site that shows history. Can't shut the door after the horse has bolted.
2) Moniker stuffed up and removed privacy on your domain. Possibly temporarily, but long enough for the archivers to pick it up.
I'm going for (2)... it has happened more than once.
