back to the OP and it being "leathery" didnt the word "Jerky" give you a tad of a clue?
agreed jack links sucks Pemmican isnt bad, home made is best
its a high protein, low fat, high salt, no carb pick me up for anything you are doing generally outdoors, its a snack not a meal.
