I just noticed that setting last week when I was checking my blogs settings. All of mine were set to NSFW (I guess it's the default setting? since I didn't touch it) which is interesting because most of my tumblr blogs are hardcore. I guess I'm in the lineup to get deleted now too?
To answer your question, the info says the Adult setting is the one that blocks your blog from SE bots.
