Typically, I do the same.
When editing video, I span both monitors so I can stretch the timeline.
When editing photos, I open Photoshop on the left monitor and other tools and/or a browser on the right. All of this can still be done using 1 large monitor and sizing your windows to your liking.
If I'm not actively working back and forth between the monitors then it really doesn't matter to me one way or the other.
