Its true there are many other industries that do have great service without the tipping angle, but many of them are paid well to do it. But there are many industries that show really poorly as far as service is concerned. Not sure where you are from, but I would argue that service in the U.S for some reason is really above par. Especially in restaurants, so much so that I think they take it a bit too far. Compared with the few cities I've visited in Europe where service was apathetic at best. Here in Canada its somewhat similar to the U.S, but a step down (our wages are higher so the tip % tends to be a little lower)
It does take a certain type of person to be in that type of job. They eat a lot of shit some days and still have to maintain that smile, and generally they are doing it for an hour at a time, not just the quick 2 minute interaction.
I actually like tipping for good service. If I go to my local coffee shop and the person remembers how I like my coffee, they should be rewarded for it. They don't have to remember, but it shows that bit extra.
