I'm using two now, but I just setup Hybrid CrossfireX on my mobo, so I may bump it up to 3 or 4 soon. I don't think I'll like anymore than two, but I'll try it.
It's super easy to multitask with two monitors. And on those late nights, it's nice to have netflix up on one and work on the other instead of having the TV on.
