Fsck on a 6tb raid volume takes a lot of time but less time than restoring that size volume. Statistically these things do happen and aren't necessarily negligent on your hosts part, either. The only solution to have you up rapidly would be if you bought an identical second server that was being regularly sync'd. Most small and medium sized clients don't duplicate their infrastructure for the rare occurrence that a file system integrity problem happens. In this instance, perhaps at an annual cost of another 5k or so. When your system (hopefully) comes up later, ask yourself if it would be worth the extra spend and if so, order a second server. I know your host understands your frustration, these things are awful, but I don't personally think its appropriate to publicly bash them for the time it takes Fsck to complete if they explained what was going on fully.
