Voice commands don't work because they haven't been fast enough, were prone to errors, and too literal. Voice works better when you use it along with standard interfaces such as keyboards and mice. Siri should be a big improvement and it looks like it is, but I haven't got to play with it yet.
The Microsoft Kinnect has so far proven to be a wildly popular interface. I don't use it for games myself but it works well when controlling my TV, watching movies, etc. And if you have ever watched people play games with it, it's amazing how well it works. It works so well that its actually fun as opposed to just being another gadget.
