You can also just take your regular recipes and substitute in other products
my favorite meat substitute is Yves Crumbles (better than Morning Star, imho)
I also use almond milk in place of regular milk (I like it better than soy milk)
Egg Replacer is good for when you want to go total vegan and the recipe calls for eggs. It takes some practice getting used to the right measurements though.
for veggie burgers, you can't beat Boca Burgers
for faux chicken, Qorn has really good Chix breasts
Whole Foods even has vegan shrimp. It's a little on the chewy side though.
For meatless sausage, Morning Star is really good.
