I fucking love bison....sort of a peppery flavored beef as the others in this thread have mentioned.
When I grew up in Wyoming as a kid, there was a guy who raised beefalo, a cow-buffalo hybrid and the meat was one of the best things I've ever eaten in my life.
It's not cheap, but because it's lean and not full of hormones, it goes further in a meal. I sometimes will substitute bison hamburger into a meatloaf and my family raves about it.
