I also think hosting depends greatly on WHAT, exactly, your websites are doing. Are they static? Do you update them regularly, are they dynamic? How many scripts are you running? Are you streaming, pulling in data via PHP, using Wordpress, using clunky, bug-filled programs on your sites that have nothing to do with hosting? How big are the files on your site which can affect load times. WHERE is your hosting? Halfway round the world or in downtown Chicago, etc?
There are cloud solutions, multi-dedi solutions, even shared plans can work depending on what you're doing....
But really, how HUGE is your host? Do they have a support "team" or just one or two people handling thousands of boxes and issues? If they DO "have a support staff" then test that staff out by calling at 3 in the morning, etc. There are enough hosting choices out there for any need.
