You need at least 2 if you use it for video converting and making use of the faster drive speed writing and reading.

Just got a new desktop/editing machine and put a 75GB SSD drive as my C: drive for software only, and it's already running out of space. When Adobe releases Photoshop, Premiere, etc., version CS6, I'll be out of space I think, so am going to a 120GB drive in the near future.
