You need at least 2 if you use it for video converting and making use of the faster drive speed writing and reading.

SSDs are fast at loading lots of small files, like for booting. (Aka low latency). That's because they don't have to spend time seeking to each file. For continously writing one big file like a video, (high throughput) a fast magnetic wins and has a lot more capacity. That assumes your drive isn't BADLY fragmented.
