Decided to buy a Nikon DSLR need lens suggestions

So I think I'm going to pickup a d7000 with much research and input from many GFYers in my last thread. Now I need to look at lenses.

Again, I am not aiming at being a professional, semi-professional or even overyly-enthusiastic amateur. I just want a good camera to take pictures of marathons, triathalons, rock climbing, hiking etc. I'm going to buy a good point and shoot for those places I can't/don't want to lug a DSLR around.

I've read lots of good things about the 18-200mm f/3.5-5.6G ED VR II AF-S DX lens. Should I start with something like this and maybe one more lens? Buy a different two lens combination? What's a good fit to start? Ideally I'd like to keep lenses ~ $1000 to start.
