Looking at the back of her hands I'd say she has been 31 quite a few times now, I'd have pegged her at late 30's , shoot her and check out her 2257's or do the pinch test if you can get away with it.
IMHO she's looking for stability, kids and a retirement plan. Probably hedging her bets in case the UFC dude starts winning big, so you might be a stand up guy, but perhaps you haven't shown her enough money to hoist the I'm a safe bet flag.
