This is what we do.
Use newspapers and cover the table and we clean outside in my pool area because I am not chasing scales inside my home.
We start at the tail on one side and follow the bone towards the head, the fillet gets thicker as you clean towards the head, we hold onto the tail and use a board with a tail pincher so the fish does not move when ya grunt threw the cutting process.
We flip it over and repeat the other side.
We then take out the stomach and autopsy it, our favorite part :-)
So the innards and head are still attached.
We then take the fillet and hold one end, and take the meat off the skin, the knife glides under it and we leave nothing on the skin carcass.
Then we wrap the remains up and place them in my freezer until the night before garbage pickup, so they don't stink and rot in the garbage can.
