the later versions of iOS (iphone only), i believe 3 onward support httpstreaming, so all you need to do is upload your vids to your server and link to them in the normal fashion. Older OS you need streaming support like the above. Other handhelds such as blackberrys, psps generally download the file first so no streaming is required.

We use any video converter for MP4, it's a good tool, although finding a common mp4 format for bb, iphone and psp is hard if not impossible! so multiple formats is an option.
