I think the illegals make LESS that minimum wage for that work. My guess is, if the farmers had to pay Americans for this, it would cost them well OVER minimum wage, plus tax matching, paperwork, accounting fees, etc.
It could be done, but the cost of our food will certainly go up to make up for the trade off.
Same story with hotel room rates, etc....
