High FPS is only needed if you're looking to shoot slow-motion. What I think you mean is you need a high shutter speed. This will likely mean you want a camera with a manual mode. The problem with video cameras is that there's a massive divide between consumer versions and professional cameras. Cheap HD cameras like the Canon HF100 work great, but they have no manual mode, and they have very small sensors. The Canon 7D is a great camera for video, has a large sensor, and has an awesome manual mode, but it has no auto-focus.

It's only when you start spending some serious duckets that you end up with something well rounded.
