If the police want to find you trust me they will. And Canada has obscenity laws so moving there will not work. Shooting offshore obscene content will not protect you. You need to see a local lawyer who knows the business. California allows things other States may not. If you want to stay safe stay a long way away from the Max Hardcore type content.

It's so tough it's going to cost you a fortune and unless you have something truly unique, which is tough for a newbie, it will not make any difference. The free loaders will watch other peoples videos.
