My advice to you would be to determine the kind of video quality you'd like to deliver and the corresponding video and audio bitrates, the framerate, and the resolution. This will allow you to come up with a more accurate size per minute figure.

Once you have that figure in mind, you can then determine how many updates per day you'd like to publish and how much memory you'll need before you're required to upgrade.
