1) You classify and identify them as Angry Old Jewish Bitches rather than just Angry Old Bitches, Old Bitches, or in the interest of simplicity: Bitches. If they were exemplary patrons, would you have referred to them as Wonderful Old Jewish Ladies? Doubtful. You probably wouldn't have given them a second glance, and their religious background wouldn't have come into play. But, of course, it does when you have to speak negatively about them and stereotype elderly female semites.
2) To have supported the server by telling the manger of his great performance would have been enough. But you seem to have seen fit to verbally assault them, and then waft your disgusting ass gas in their direction as you were leaving. That's not exactly civil and polite behavior, and before you volley with "well they were being mean tooooooo", just remember that two wrongs don't make a right -- always take the high road -- and etcetera ad nauseum.
3) You mention you have Jewish friends. That's probably the most thinly veiled attempt at trying to preempt any accusations of antisemitism. It's like the old "I have Black friends, so I feel I'm allowed to call those Black guys over there a bunch of spear-chucking porch monkeys." Sorry, not happening.
4) There's nothing worse than old, mean Jewish bitches? How about having to read stupid posts on GFY about mundane restaurant experiences from vapid dummies? That's much worse
