As for the cow tongue its a first I'm hearing of it but I know of a sheep tongue souce and its pretty much prepared the same way as the pig feet or a chicken souce. These are not choice cuts of meet as you know and mostly the poor an unfortunate would buy these because of the lower costs, but don't ever under estimate what a woman could do in the kitchen to feed her family. These types of meals and recipes were past on for many generations from the days of slavery up to the present.
