I am in Canada, and went with adultinternetlaw.com. I think you will find that if you try to go through a Canadian lawyer or group to help you with this, they will not have the expertise and will simply have an American lawyer do all the work - possibly someone who is not familiar with the exact requirements of Visa and the IPSPs.
What you want is someone who is familiar with helping Canadian webmasters/companies set up a legal entity in the US that meets Visa's requirements as well as all US laws - that's adultinternetlaw.com. There's a few other US firms that have the same expertise, but that is the one I am familiar with. I'm quite happy with what they have done for me in this regard. It cost me about 3k US in the end.
I recommend you go with a law firm rather than an incorporation service like corporate.com (unless money is an issue, but you implied it is not, and want it done right). adultinternetlaw.com has many Canadian clients like us.
