Office 2008 OSX (Yes hate MS like everyone else but office works well)
Adobe Creative Suite
BBEdit
Fetch (best ftp client for the mac)
Stickies (comes in your apps folder - invaluable)
Skype
Adium (my fave IM client)
Firefox with Foxmarks (lets me keep bookmarks synced everywhere)
I use alot more but I use the above every day
