Some Spam filters used to (some probably still do) that once a message is identified as spam, generated a "signature" of what the spam's body contained.

This "signature" is compared to other incoming emails. If they match then it's tagged as spam. The "random" characters are an attempt to fool the smap filters by constantly changing the message's signature.
