I'll second Maui Four Seasons in Wailea.
My wife and I try to go at least once or twice a year to unwind. Its been ranked the best resort in the US and it lives up to the hype. You'll be pampered and never want to leave.
Maui is the one place where when I leave I am already planning the next trip on the plane ride home.
On a side note, if you choose Maui as your island go with Wailea area (Four Seasons, Fairmon Kea Lani, Grand Wailea). It's on the south side of the island and it has more sun and less humidity.
