salsa should never have vinegar in it, if it does, its horrible. this is not just my opinon, its why people make fun of Pace Picante salsa, its nothing but pickled/vinegar, and I wouldnt call it salsa.
store bought salsa makes me face pucker if i try to eat it, i simply cannot do it, its gross to me after you are used to eating the hand made stuff.
for those wondering about recipe:
each pepper, tomato etc is hand roasted over open fire
we use 4 different chilis: anaheims, dried chilis, jalepenos, and because i couldnt find habanero I used some generic "long hot peppers" not sure the name, normally it would be Habanero.
lots of garlic, you can see the green cilantro, onions, we also used different tomatoes than you can probably find in your area... they are called "Creole Tomatoes" they are locally grown to withstand the Louisiana Summer Heat, sooo good.
i honestly couldnt tell you everything we put in there, its just one of those things you do while you in the kitchen, we dont follow a recipe, we just make it!
