My favorite: http://www.hotelplacedarmes.com/ Quiet, central to old montreal and nice spacious rooms.

I also liked http://www.hotelstpaul.com/en/index.php although it's in a much busier location. Very modern and they got awesome mushroom risotto on their room service menu.
