well I'd chime in but I don't know what types of things she likes to do, or what cool places are in your vicinity.
However, maybe a themed mini vacation or something? I think anniversaries are more about the quality time you spend together than expensive gifts.
Sometimes the simplest things can be the most pleasureable. Spend a little time setting it up and surprise the hell out of her.
