If you use percent, you are gonna have some fucked up looking websites!
Try doing tables in about 740 pixels wide (or close) and your site will look awesome in 800x600, and decent in 1024x768.
You can experiment with the 740 pixel width, but leave room for scroll bars. If you go 800 pixels wide for a table, you will have side scrolling which is annoying as hell.
