Thunderbird for sure. It has good junk mail learning capabilities and you can always utilize plugins if you want.
I tried entourage for like 5 min and the junk mail just kept flowing. Too much of a pain to make a bunch of rules.
Another option is Gmail. Download the gmail notifier. It shows up on your toolbar by the time.
