I like to make a lot of vegetarian indian food, because that style of cooking lends well to vegetables. Plus if you wanna enjoy eating veggies for a carnivore such as myself, look no further than the country that's like 75% vegetarian for advice. That was really the reason I started to learn a bit, I figured if anyone knows how to cook vegetables it's Indians.

You need to stock up a little at first though. Need fresh yogurt, masalas, curry powders or leaves, turmeric and other spices, dried chiles, special flours, few different kinds of lentils and dried peas, a bottle of ghee, and some basmati rice. Mmm.. Asephetida is another one, that shit smells crazy. Some tamarind.. fuck the list goes on.

If you ever had their "Mango Lassi" which is like a mango shake, it's super simple.. mango, plain yogurt, bit of sugar... blend.
