Your 100% correct they do purposely burn their beans. Its because they buy vast amounts of green beans that no single grower can supply at the price they pay. So they buy from a large number of growers who all produce beans that taste different. To make the coffee consistent in every store they mix huge vats of these bean and over roast them slightly to give a strong bitter taste, thereby masking the true flavor.
Remember they by cheap, way cheap. The average coffee shop cannot compete with their buying power so you will find the smaller companies charge a little more, i for one am happy to pay 10, 20 or even 30 cents more for ( Fair Trade ) coffee that has flavor.
Fair Trade = a fair price is paid to grower
