That would be easy to do depending on a few variables. (like was the camera stationary on a tripod and what the subject is) Just take out a few seconds from every minute and splice it back together.

Most of the time lapse videos you see usually take place over a longer span by using the "time lapse" feature on the camera itself. Like the construction of a house, or the blooming of a flower, etc.... You would just set your camera up on a tripod and have it record for a few seconds every hour or so.
