Hi SAC,
Use a video camcorder that records right to a built-in hard disk. They give great quality, and you can copy it to your hard disk 100 times faster than the real-time you're forced to use with Mini DV. Sony, JVC etc all make them.
Once you have them to your hard disk, you can convert the file to any format you want with a program like Videozilla, or edit it with a simple program like Windows Movie Maker.
